Apple Crumble
From the kitchen of American Homes Baking

So this one is not the healthiest of desserts, but if you keep the portion small then you won't feel too guilty after eating it. :-) 
 
Ingredients: 
Topping: 
2/3 cup flour (I used whole wheat)
1/3 cup rolled oats

3 tbsp granulated sugar (I used Splenda)
1 stick of butter (still trying to figure out a substitute for this one. ;-/) 



Filling: 
4 large apples- peeled and cored into slices
2 tbsp firmly packed brown sugar
1 tsp cinnamon


Directions: 
1. Preheat oven to 425 degrees. 
2. Grease 2 quart baking dish. 
3. For the topping; place the flour, rolled oats, sugar, and butter in a large bowl. Mix well. 
4. Layer the peeled/cored apple slices in the prepared baking dish. 
5. Sprinkle with brown sugar and cinnamon.
6. Sprinkle the topping mixture over the top. 
7. Bake until the apples have softened and the crumble is lightly golden. 20-25 minutes. 
8. Serve warm with ice cream.
 

Chewy Bread Machine Bagels
From the kitchen of Kim Scott

Ingredients
1 1/2 teaspoons of yeast (I bought it in bulk at Winco, and a small container to store it in)
2 cups of all-purpose flour (I used 1 cup white, and 1 cup whole wheat)
1 tablespoon of sugar
1 teaspoon of salt
3/4 cup of very warm water

OPTIONAL: 1 tsp of cinnamon, 1/4 cup of raisins, and an extra tablespoon of vegan sugar (I used two individual packets of Stevia sugar).

Directions:
1. Place ingredients in your bread machine. 
2. Select dough or manual cycle. (Mine is 1 hour and 20 minutes long) (Hint: start boiling the water before the dough is ready!)
3. When cycle is finished, remove the dough from the machine and roll into 6 snakes about 10 inches long. 
4. Press the ends tightly together to form a doughnut shape.
5. Bring a large pot of water to boil.
6. Place bagels in the boiling water for 2 minutes (The longer they boil, the chewier they are.)
7. Remove from the water and place on a lightly greased cookie sheet.
8. Bake at 350 degrees for 20 minutes until golden color.

I have to work on the rolling part... but other than that they were SUPER easy and taste so yummy!



My Current Favorite Smoothie Recipe:

1 cup of spinach (or more)
1 banana
1 cup frozen strawberries
1 cup frozen blueberries
tbsp wheat germ
tbsp flax seed, ground
cinnamon
1 1/2 cups of Kirkland Orange Juice (Just juice- nothing added)
water

Add all ingredients to blender, fill water just below top of ingredients once they are all in the blender. Pour into a cup and enjoy the nutrition and yumminess!!!!!!
